Crabby Appleton!!

I don't know why that came to mind while I was writing this...but Wow am I  dating myself...Tom Terrific, Mighty Manfred  with their dastardly villain Crabby Appleton who was always saying I am rotten to the core... anyways  my apples were not rotten to the core they were terrific...what a great first year for these little gems...
 Last year I had 6 apples total on the tree....not so this year...maybe it was all that rain...maybe it was time to really produce...maybe a bit of both...all I know I was really happy looking out back & seeing this on the tree...I have 10 other trees growing that I took from this main tree & one has already produced some apples!!  

So this year total harvest was 8 cups...
This is a very easy recipe & fun to make..
 After cleaning, pulling the stems & cutting these little guys in half...
 It is time to make Jelly!!

Crab-Apple Jelly
8 cups crab-apples
3 cups sugar 
1 stick cinnamon or 1/2 tsp cinnamon
1 box no/low sugar Sure Jell

* Even tho crab-apples are high in pectin, I still added the sure jell just to make sure it jelled properly...

Cover with just enough water to cover the apples..
For 8 cups I used almost 6 cups of water...
Bring these to a rolling boil , turn down to medium-low 
& simmer for 15 minutes....
Then strain through a few layers of cheese cloth...I let them drip for about an hour...
I took the dogs for a walk...it was such a great fall day... 
When I got back, I squeezed very gently for anymore juice then off the the compost for the apples...
You want to end up with 5 cups of juice....
then I added the sugar, cinnamon & Sure Jell...then cooked on medium -high, skimming off any foam that came to the top.... cook until the thermometer reaches 200-210....if you do not have one, use the sheet method found here...this is what I use...

 Then pour into sterilized jars & process in a boiling water bath for 10 minutes....I ended up with 5 half pint jars....& it is SO good...yes we already broke into one of them.......it will be nice to have on those cold winter mornings on homemade bread!!

Harvest Moon

 This years Harvest Moon was exceptional....Maybe the birth of our Baby Granddaughter had something to do with that...**Wink**....Everything is right with the world....  even through the chaos & turbulence that exists all around in the world......there are those moments when it all melts away.... only Peace & contentment fill the air...the sounds of Nature at night....everything feels soft & peaceful......

This time of the year is a favorite...the air is cool..the sunsets are beautiful...things slow down & seem less hectic....Mother Nature seems content & dons her colorful garments ...& there is the Harvest...the cupboard is full of medicinal balms, tinctures & oils this year...the freezer & pantry are filling up with jams, veggies & sauces...But there are other harvests as well....what we have gathered to ourselves over the past year.....Ours was bountiful  & it was a good time to reflect on the emotional & spiritual aspect....... of changes of which I am so very grateful....of the wonderful people in our lives....releasing the negative & gathering the positive... even tho there was death there was life....I would like to think that Lura & Lily passed each other on the way, stopping to give each other a hug & saying hi as they traveled on to their destinations....that gives me comfort....it is a balance of equality.... Yin & Yang....dark & light..... appropriate for this equinox.....


I had my meditation outside on the Full Moon.....the night could not have been more perfect with the fire crackling surrounded by the elements of Nature as I listened to a new Deepak Chopra meditation.....I wrote what I wanted to release & burned it...then I went through my gratitude list...
The moon was rising over the Moon Gate...if you look close you can see the twinkling lights in the background...... which seemed fitting & a nice way to end the summer...I am still hoping that a couple of Moon flowers will still appear on the gate before the first frost.......I am so grateful for all that I am fortunate to have surrounded by such a beautiful environment....something I never take for granted..... Now we look forward to a cookout with some good friends ...

New Moon over the Gate....

 I thought the New Moon would be a good time to update you on the Moon Gate that I built this spring...
 After a bit of a rough start....the girls loved picking the leaves off as it grew...they finally left it alone enough for the Moon flowers to grow over the arch...I am still hoping that I might see a flower or two before a frost hits....

 One side still didn't fill in as much as I liked but I was happy with the first year results....I need to spend some time on the two side gardens this year so I am going to continue to build up the stone walls & top it off with cow manure so next year I will be ready...along with some deer fencing to protect the young Moon Flowers from nibbling beaks !!! I have a few perennials in but I cut then right to the ground to send all the energy into the roots to get established...Hopefully next year there will be more flowers & greenery to fill it up....
At night is when it gets magical....the fairies come out to dance.... 
They start at dusk....

 & play all night among the leaves..........
On the New & Full Moon it is a nice place to be  to soak up the Moons energy......
